MADURAI FOODS Sambar Recipe (for idly, dosa & medhu vada)

                             

Madurai Foods Sambar Recipe

Required ingredients:


1.Toor dal - 1/2 cup, Oil - 1 teaspoon
2.Mixed vegetables - 1 cup (carrot,beans,bell pepper)
3. Madurai Brand Sambar powder - 1 teaspoon, Turmeric powder - 1/4 teaspoon, Tamarind paste - 1 table spoon
4. Tomato - 1 (chopped),
5. Onion - 1 cup (chopped),
6. Oil - 1 table spoon
7. Mustard seed - 1 teaspoon, Urad dal (split) - 1 teaspoon, Curry leaves - 10 nos,Red chilli - 2 nos, Cumin seeds - 1 teaspoon,Asafoetida powder - 1/4 teaspoon
8. Salt - 2 teaspoon
9. Cilantro - chopped



METHOD:


1. Pressure cook No 1. Items with 5 1/2 cups of water for 10 minutes.
2. Heat the oil and add the item No.7
3. Add the onion and fry until transparent.
4. Add the tomato and saute it until soft.
5. Add the vegetables and 1/2 teaspoon of salt & cook until crisp.
6. Add the item No.3 and mix well.
7. Add the cooked dal and salt and let boil for 15 minutes in medium heat.
8. Remove from the stove.
9. Garnish with item No.9

How To Make Adai:


1. For 2 LB of batter, add approximately 150 ml. of warm water (not hot water),2 teaspoon of crushed fennel seed and mix gently.

2.Heat cast iron griddle or non stick tawa.

3.Pour ladle of batter and spread it in circular motion from center towards the edge of griddle (thicker than regular dosa and thinner than uthappam in medium heat).

4.Add 1 teaspoon of oil around it. Let it get cooked.

5.Then flip it over to the other side and add 1/2 teaspoon of oil around it, let it set cooked.

6.Remove from griddle and serve with avial or butter.


OPTIONAL:


Mix the following ingredients with Madurai Foods Adai Dosa Batter  and  make delicious adai.

 

1.Finely chopped onion----------- 1 cup

2.Grated carrot------------------ 1/4 cup

3.Chopped ginger----------------- 1 tablespoon

4.Grated coconut----------------- 2 table spoon
