Adai dosa is made of lentils & rice. So we can say Mixed dal dosa / Multi dal dosa / Multi lentil crepes. We can add drumstick leaves to increase the nutritional value. It is rich in iron and healthier than regular dosa. Adai goes with coconut chutney, tomato chutney, avial, butter & jaggery.

How to make adai:

For 2 LB of batter, add approximately 150 ml. of warm water (not hot water), 2 teaspoon of crushed fennel seed and mix gently. Heat cast iron griddle or non stick tawa. Pour ladle of batter and spread it in circular motion from center towards the edge of griddle (thicker than regular dosa and thinner than uthappam in medium heat). Add 1 teaspoon of oil around it. Let it get cooked. Then flip it over to the other side and add 1/2 teaspoon of oil around it, let it set cooked. Remove from griddle and serve with avial or butter.

Optional: With this batter, mix the following ingredients then make delicious adai.

Finely chopped onion----------- 1 cup

Grated carrot------------------ 1/4 cup

Chopped ginger----------------- 1 tablespoon

Grated coconut----------------- 2 table spoon
